Makes: 1 loaf/8 slices

Cook time: 25 minutes
Ingredients
125g margarine or butter
200g granulated sugar
4 large eggs
2 passion fruits
80g sugar
125g California Prunes
1tsp vanilla extract
250g self-raising flour
1 lime
½ tbsp granulated sugar
Method
Place the margarine and California Prunes into a food processor and blend until smooth.
Add in the sugar and blend again.
Add the vanilla, then crack in the eggs, one at a time, while the mixer is on full speed.
Finally, add the flour and mix quickly making sure you don’t over mix - 10 seconds should be enough.
Transfer the cake mixture into a 2lb loaf tin lined with baking parchment paper. Bake in a pre-heated oven at 170°C for 20-25 minutes.
Once the cake is baked, remove from the oven and leave to cool for 10 minutes. Then, using a cocktail stick, poke holes in the top of the cake to allow the topping to soak in.
Mix the passion fruits, lime juice and sugar in a bowl, then pour over the cake
Scatter the ½ tbsp of sugar over the top for a nice, crackled finish and serve.
