Recipe
Makes: 16-20 meatballs
Ingredients
For the meatballs
300g mince pork
60g dried breadcrumbs
2 tbsp olive oil
300g mince beef
1 free-range egg
Salt and pepper
For the gravy
1 garlic clove
½ white onion, finely chopped
1 tsp fresh thyme
100ml double cream
1 pint beef stock
150g California Prunes
Method
In a bowl, mix together all the meatball ingredients and shape into meatballs (this will make 16-20 meatballs).
Use an ice cream scoop to get them all the same size.
Place on a baking tray and cook for 15-20 minutes at 170°C.
To make the gravy, place a pan on a medium heat and cook the onions until soft along with the garlic and thyme.
Pour in the beef stock and reduce by a third. Add the cream, reduce the heat and allow to simmer for a few minutes.
When the meatballs are cooked, remove from the oven and add to the gravy with the California Prunes.
Serve with jacket potatoes and your favourite vegetables.
